The harvest Europe did not get
For weeks this was a forecast. This week it became a count.
Relentless heat and the worst soil drought on record could halve France’s maize crop, analysts told Reuters.
The whole bloc is short. In late July the European Commission cut its 2026/27 EU maize forecast to 51.9 million tonnes, already the lowest since 2007.
Most EU maize goes to animal feed and industry rather than straight to a plate. A short crop shows up first in the price of feed, then in milk, meat and eggs.
Same heat, five different losses
Italy is Europe’s largest rice grower, with about 235,000 hectares planted last year and more than 80% of it in three northern provinces.
Austria is a wet country, and it expects a grain harvest 19% smaller.
On the Danube, water is so low that a Budapest boulder known as the Rock of Starvation has surfaced almost entirely.
Britain’s cereal and oilseed harvest is forecast at 18.5 million tonnes, the worst since detailed records began in 1984.
In the United States the loss came from a spring freeze rather than a summer drought. Steve Ela found nine peaches on 12,000 trees in western Colorado.
Not everything failed. Britain’s berries are smaller and sweeter after the sunniest July on record, and cider apples may have a bumper year.
The bill has not reached the till
Prices have been strangely calm. British food and drink inflation ran at 1.7% in the year to June, the lowest since August 2024.
The wider system also carries more slack than it used to. Near-record stockpiles, higher-yielding varieties and the rise of Brazil and Russia as exporters leave the world less exposed to this year’s very strong El Nino than in past events.
Where a loss falls outside any policy, someone absorbs it quietly. Moody’s estimates last summer’s European heatwaves cost 43 billion euros in lost output while generating about 500 million euros of insured payouts.
America’s food-safety machinery, stretched thin
The cyclospora outbreak traced to imported iceberg lettuce has sickened more than 24,000 people and killed two.
The New York Times obtained emails showing Michigan investigators asked Taco Bell for supply-chain records on 1 July.
FDA employment is down 22% in 2026 against 2024, and foreign food-facility inspections fell nearly 13% in fiscal 2025 while imports kept rising.
The cost of next year’s crop
Farmers are pricing the 2027 crop now, and it is dearer. Anhydrous ammonia, the main nitrogen fertiliser, was $915.50 a ton in Illinois on 7 August.
The step nobody photographs
In Nyagatare, in eastern Rwanda, the FAO, the UN’s food agency, handed a farmers’ cooperative five maize shellers, two tractors and two drying units this month.
The far end of the same chain is being counted too. A national strategy modelled for Uganda found that better handling of organic waste could avoid up to 1.3 million tonnes of carbon-dioxide-equivalent methane a year by 2035.

The arithmetic only helps if you know each step's real loss, and the steps nobody measures are usually the ones quietly doing the most.

The field is only the first cut
France may harvest half the maize it did last year. Britain is heading for its smallest cereal harvest since 1984. Those are real losses, and they all happen before anything is loaded onto a lorry.
But the field is one step. Between a ripe crop and a meal there are several more. The crop has to be dried, stored, moved, sold and cooked. Each of those steps loses a little. Grain gets damp and moulds. Fruit bruises in transit. A crate sits too long in a warehouse. A bag of salad goes brown in a fridge.
Every one of those losses sounds forgivable on its own. That is exactly the problem.
Losses multiply, they do not add
Take a chain of six steps, and say each loses a tenth of what reaches it. Six steps, ten per cent each. It is tempting to add them up: sixty per cent gone.
That is not what happens. Each step takes its cut of what is left, not of what you started with.
Begin with 100 tonnes. After the first step, 90. After the second, 81, because the second step takes a tenth of 90, not of 100. Then 72.9. Then 65.6. Then 59. Then 53.1.
Just under half the food is gone. Forty-seven per cent, not sixty.
The arithmetic is kinder than the naive sum and far harsher than any single step suggests. Nobody along that chain did anything unusual. Nobody was careless. Half the harvest is missing anyway.
The average tells you almost nothing
Now the useful part. What governs the total is not the average loss. It is the worst one.
Say five steps lose a tenth each and one loses three tenths, because the drying is bad. About 41 tonnes of the original 100 arrive.
Spend money two ways. First, shave a point off all five good steps, so each loses nine per cent instead of ten. About 44 tonnes arrive - a gain of just over two, from five separate improvements.
Or leave those five alone and fix the bad step, bringing it from thirty per cent down to ten. About 53 tonnes arrive. Almost twelve tonnes better, from one change.
Roughly five times the gain, from a fifth of the effort. A chain is not governed by how it behaves on average. It is governed by its worst link, and improving everything else barely moves the total while that link stands.
Where you fix it matters less than you would think
Here is the part that catches people out. Fixing a step early in the chain and fixing an equally leaky step late in it produce exactly the same amount of food at the end. Multiplication does not care about order. A tenth saved at the drying shed and a tenth saved at the shop leave the same tonnage on the table.
What differs is everything else spent along the way. Grain that dies in a shed was never trucked, chilled, packed or driven home. Grain that dies on a shelf has already had all of that spent on it.
So an early fix wastes less water, diesel and labour, even though the final plate looks identical. That is a real argument for a dryer at the farm gate over a better fridge at the till. It is simply not the argument people usually give for it.
What gets counted, and what does not
This month a farmers’ cooperative in Nyagatare, in eastern Rwanda, was handed five maize shellers, two tractors and two drying units. It made headlines almost nowhere. The drought in France made headlines everywhere.
Both are the same quantity: food that existed, or could have, and never reached a plate. One is visible from a satellite. The other is a mould stain inside a sack.
Systems measure what is easy to measure and pay for what gets measured. Harvests are counted because they are sold, and the money in farm policy - subsidies, insurance, yield targets - attaches itself to growing. After the sale it thins out fast. Nobody chose that as a rule about where food is lost. It simply followed from where the counting stopped.
Everyone is standing on the same chain
The chain does not end at a farm gate or a loading bay. Its last step is a kitchen, and that one belongs to whoever is reading this. The bag of leaves that went slimy is a step in the same arithmetic as the grain that moulded in Nyagatare, multiplied by everything that came before it.
That is the uncomfortable part of seeing a chain whole. From inside any one link, your own loss looks small and reasonable, because it is. Nobody standing at their own step can see the product of all the others. The total is real and nobody holds it.
